I don't know about where you live, but here in the heart of Texas summertime has not let up.  When it is this hot outside the last thing I want to do is fire up the stove in the kitchen and eat hot food, so I often turn to salads for a great option for dinner.  Of course some of the ingredients in these salads are cooked but I often throw together salads made out of leftovers from the night before.
