 This is a fresh and easy dinner to prepare for a group.  I recently made it when I was hosting bible study at my house and it was a big hit!

I love to make this black bean mango salad as a side for any kind of Mexican cuisine.  I change it up a bit depending on what I have- pineapple is also a good substitute for the mango.  Sometimes I make it more spicy by adding fresh onions or jalepenos.  It is also great served on chips.

Black Bean Mango Salad Ingredients:

1 can black beans (drained and rinsed)

1 diced mango

1-1/2 cups corn kernels (I use frozen)

1 diced red pepper

1/4 c. diced fresh cilantro

2 Tbs. fresh lime juice

1/4 tsp. cumin

1/2 tsp. chili powder

1/4 tsp. salt

Tostada Bar:

Shredded Slow-Cooker Chicken Taco meat

tostada shells

shredded lettuce

diced tomatos

shredded cheese

fresh guacamole

sour cream

refried beans

To make the black bean mango salad, chop all the ingredients...

... and combine them in a large bowl.  It is best if you let it chill before serving.

For the tostada bar, set out all the ingredients and let your guests build their own tostada creations!

I like to start out by spreading refried beans, then chicken, cheese, lettuce, tomato, and a dollop of sour cream and guacamole on top.

Black Bean Mango Salad Ingredients:
  • 1 can black beans (drained and rinsed)
  • 1 diced mango
  • 1-1/2 cups corn kernels (I use frozen)
  • 1 diced red pepper

  • 2 Tbs. fresh lime juice
  • ¼ tsp. cumin
  • ½ tsp. chili powder
  • ¼ tsp. salt
Tostada Bar:
  • Shredded Slow-Cooker Chicken Taco meat
  • tostada shells
  • shredded lettuce
  • diced tomatos
  • shredded cheese
  • fresh guacamole
  • sour cream
  • refried beans

Instructions
  1. Mix all of the ingredients for the black bean mango salad in a bowl. Chill in the fridge before serving.
  2. Set out all the ingredients for the Tostada Bar and let people build their own!
