In my books this is a perfect dinner for busy Mamas to make.  It is incredibly easy, healthy, and delicious!  That is why it has become a staple in our house lately.

I love to toss the ingredients together while my boys are napping.  Then it is a cinch to pop it in the oven an hour before dinner-time and when my husband gets home from work he is greeted with a delicious smelling house, hot and healthy dinner, AND a happy family (I learned that trying to make dinner in the evening with 2 toddlers in the kitchen leads to stress and crying– for all 3 of us– who wants to come home to that?)!

The other nice thing about this recipe is that is versatile, so you can change it up depending on what is in season or what’s in your fridge.  I happened to have purple potatoes, butternut squash, and carrots when I made this but some other options are brussels sprouts, sweet potatoes, acorn squash, onions… any veggies that are good for roasting!

Ingredients:

1 pkg. mild Italian turkey sausage (or your favorite kind of sausage)

6 cups cubed veggies

2 T. olive oil

2 T. fresh rosemary (or 1 T. dried… or substitute your favorite herb/spice blend)

salt and pepper to taste

1.  Chop your veggies into 1″ cubes (or smaller).  Put them in a bowl and pour on the olive oil, herbs, salt, and pepper and toss to coat.

2.  Spread the veggies on a tray.  Cut each sausage into 6 segments and spread them on top of the veggies.

3. Bake at 375 degrees for about 50 minutes, or until sausages start to brown a little and veggies are cooked to your desired

softness.

School is JUST around the corner!! Can you believe it!!!?? Today, Kara of Happy Go Lucky, Kate of Cheap Crafty Mama and Ami (myself) of AliLily are bringing you School Lunch Ideas!!

On a personal note: This is my, Ami of AliLily’s FIRST official school year as an Early Childhood Teacher at an accredited Private School! I am so excited and so overwhelm!! Alice will be attending Kindergarten at the same school; BTW the school is Mission Bend Christian Academy. With all the planning of Alice’s first year in grade school and my first year teaching in a grade school I needed more ideas for lunch. Don’t we all?? Spring is here, the sun is shining, and I’m ready to start cooking dinner outside while watching my boys play in the yard!

Here’s one of our new favorite dinners that is much easier to make than it looks!  It is very light, fresh, flavorful, and perfect to make for guests.

Ingredients:

1 lb. shrimp

1/4 cup cilantro

1 tsp. salt

1 tsp. ground cumin

1 tsp. chili powder

juice from 1 lime

2 cloves of garlic, minced

2 T. oil

1 cup diced pineapple

2 bell peppers, sliced into strips

1 small onion, sliced into strips

Mix the salt, cumin, and chili powder together in a small bowl.

Put the shrimp in a bowl (or zip-lock bag) with half of the spice mixture, garlic, cilantro, lime juice, and 1 T. oil, and diced pineapple.  Mix it together and put it in the fridge to marinate for at least half an hour.

Slice the bell-peppers and onion and sprinkle with the remaining spice blend and 1 T. oil.

Heat up your grill to medium-high heat (you can use a wok on the stove if you are not able to grill).  Put the peppers and onions in a grill basket and grill until they start to get tender, then toss in the shrimp and pineapple mixture.

When the shrimp turn pink they are done, it should only take a few minutes if your grill is hot enough.

Serve on tortillas and garnish with cilantro.  These are also great with salsa and guacamole.  If you are looking for a good side dish to serve with these fajitas try my black bean mango salad!
