My family is pizza crazy.  We make it at least once a week and love to experiment with new topping; finding our inspiration in whatever we have lying around the kitchen!  My kids also love to get involved in making the dough and putting toppings on the pizza (and then eating it, of course)!

This is our go-to recipe for super easy pizza dough (no kneading required!!).

(The measurements in bold are for a regular 15" pizza, the ones in the parentheses are for thin crust)

2-1/4 cups + 3 T. (1-1/2 cups + 2 T.) unbleached all purpose flour

**if you want whole wheat crust substitute 1/3 whole wheat flour**

1-1/2 tsp. (1 tsp.) instant yeast

1-1/2 tsp. (1 tsp.) sugar

1-1/2 tsp. (1 tsp.) salt

1 cup (2/3 cup) water, slightly warm

cornmeal for dusting

Start by putting the flour, yeast, and sugar in a bowl.  Stir with a whisk (if the yeast comes in contact with the salt it doesn't work as well) then add the salt and stir with a whisk again.

Add the warm water and stir it with a spoon until it forms a shaggy ball.  I sometimes use my hands to work all the flour into the dough.  The dough should be firm and a little sticky.  If it is too hard and you are having trouble getting all the flour mixed in, add a little more water.  If it is super sticky and won't form a ball, add more flour.

Cover the bowl with plastic wrap and let it rest until the dough is at least doubled in size and filled with bubbles.  This usually takes me around an hour and a half but if it is a hot day it rises more quickly.

Turn the dough out onto a floured surface and put plenty of flour on both sides.

Sprinkle some corn meal on your pizza tray and stretch the dough by hand into a large circle.  I usually start by stretching the center, then setting it on the sheet and rotating the tray while I stretch the edges.  If you are having a hard time stretching it, let it rest for about 5 minutes and then try again.

Pre-heat your oven to 475 degrees.  Bake the crust for about 4 minutes, then take it out and add your toppings, then put it in for 5-10 minutes, until the cheese and crust start to look toasty.  YUM!
