I have been using agave nectar as a substitute for honey for a few years and think it's a great addition to any pantry.  I like it because it costs less than honey, tastes good, doesn't get thick and crystallized like honey does and it is easier to mix into liquids like smoothies and salad dressing.

Here are some other great things about agave nectar:

*it is an all-natural sweetener from the agave plant

*it's strong sweetening properties make it a perfect addition to beverages like coffee, tea, and smoothies

*great substitute for corn syrup (in baking and cooking), pancake syrup, or honey

*It has a low glycemic index which means that is slowly absorbed by the body and doesn't cause the same rapid increase in blood sugar as table sugar

Agave nectar is readily available at most grocery stores these days, including Wal-mart and Costco!

Here are a few of my recipes that use agave nectar as an ingredient:

Pineapple Fried Rice

Vinaigrette Dressing

Orange Quinoa Salad

Have you tried Agave Nectar?  How do you like to use it?

I used agave syrup for a while last year until I found out that it is 90% fructose which means that the sugar in it bi-passes the pancreas hence the low GI and ends up as fat- the body uses very little fructose.
I switched to rice malt syrup and use that instead now.
