We have been trying to eat more healthy whole grains lately and quinoa has become one of our favorites.
Not only is quinoa yummy, but it is SO good for you too!
It is high is protein ( including all nine essential amino acids) and is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair. It also is a very good source of manganese as well as a good source of magnesium, folate, and phosphorus. So quinoa is thought to be be especially valuable for people with migraine headaches, diabetes and it has significant cardiovascular benefits. It is also great for vegetarians and vegans as it is a great source of protein.
We buy quinoa in bulk at Costco and I cook up huge batches of it, then freeze it in smaller (family-sized) portions.
We have found that it is a great substitute for rice, cous-cous, pasta, or really any grain.

I love quinoa and make a really nice salad with roasted sweet potato and macadamias, we liked it as a mac and cheese substitute too!
