Mexican Chicken Chopped Salad with Lime Cilantro Ranch

I don’t know about your part of the country but around here it is starting to get to the time of year when I don’t want to cook a dinner that is going to heat up the kitchen or involve me standing around hot surfaces.  In the summertime we eat a lot of fresh salads for dinner.  I love them because they are healthy, easy to make, and don’t make me hot to cook them or eat them!

This is one of my favorite salads because I love all the fresh veggies combined with the crunchy corn chips and zesty cilantro lime ranch dressing!

Ingredients:

2 cups chopped cooked chicken (I’m using rotisserie but grilled would be great, or my shredded chicken taco meat)

1-1/2 cups chopped fresh tomatoes

1 1/2 cups beans (I used a mix of ranch-style pinto beans and black beans, just because that was what I had on hand)

1-1/2 cups corn (I used frozen which I thawed in the microwave)

1 avocado, chopped

1 cup Fritos corn chips

6 cups lettuce

1 Tbs. ranch dressing mix

1 cup sour cream (I used fat-free)

1/2 cup fresh cilantro

2 Tbs. fresh lime juice

Chop up all of these yummy ingredients and toss the lettuce, chicken, tomatoes, beans, corn, corn chips and avocados in a big bowl.

To make the dressing, combine the sour cream, cilantro, lime, and ranch dressing mix in a small food processor or blender.

Blend it until it is mixed together well and the cilantro is finely chopped.

Okay here comes the hard part (not really, there isn’t a hard part)- pour the dressing on top of the salad, mix it together, and serve it up!  Enjoy!

  1. Yummy!! Sounds so good..I totally agree this time of year it’s way too hot to do any cooking that makes the kitchen hotter than it already is!! Might have to try this recipe minus the avocados! I think we are the only ones in the world that don’t like them!
