Mexican Quinoa Salad

Quinoa is quickly becoming a staple at our house.  With all of the health benefits and delicious ways to prepare it, it is always a winner with the whole family.  Here is a new way I came up with for making a yummy meal out of this sweet grain.

Ingredients:
3 cups cooked quinoa
1 cup diced (cooked) chicken-- optional
1 cup diced tomato
1 cup diced red pepper
1 cup corn
1 cup black beans
1 cup cilantro
1 garlic clove
1 T. apple cider vinegar
3 T. olive oil
1 T. agave nectar or honey
1 tsp. salt
2.5 T. fresh lime juice
To make the salad, put the quinoa in a large bowl and prepare the veggies and chicken.
To make the dressing, combine the last 7 ingredients in a small food processor.
Mix everything together in the large bowl (I love my little helper, even though he grabs hand-fulls of quinoa out of the bowl and stuffs it in his mouth).
And it's ready to serve, or you can refrigerate it a while before serving.  This makes great leftovers too!

Easy, delicious, and healthy salad! The zesty dressing and crunchy veggies will have your family coming back for more!
Ingredients
  • 3 cups cooked quinoa
  • 1 cup diced (cooked) chicken
  • 1 cup diced tomato
  • 1 cup diced red pepper
  • 1 cup corn
  • 1 cup black beans
Dressing
  • 1 cup cilantro
  • 1 garlic clove
  • 1 T. apple cider vinegar
  • 3 T. olive oil
  • 1 T. agave nectar or honey
  • 1 tsp. salt
  • 2.5 T. fresh lime juice

Instructions
  1. Combine the first 6 ingredients in a large bowl.
  2. To make the dressing, place the last 7 ingredients in a small food processor and blend to desired consistency.
  3. Mix the salad with the dressing and it's ready to serve!
