Quinoa is quickly becoming a staple at our house. With all of the health benefits and delicious ways to prepare it, it is always a winner with the whole family. Here is a new way I came up with for making a yummy meal out of this sweet grain.
- 3 cups cooked quinoa
- 1 cup diced (cooked) chicken
- 1 cup diced tomato
- 1 cup diced red pepper
- 1 cup corn
- 1 cup black beans
- 1 cup cilantro
- 1 garlic clove
- 1 T. apple cider vinegar
- 3 T. olive oil
- 1 T. agave nectar or honey
- 1 tsp. salt
- 2.5 T. fresh lime juice
- Combine the first 6 ingredients in a large bowl.
- To make the dressing, place the last 7 ingredients in a small food processor and blend to desired consistency.
- Mix the salad with the dressing and it's ready to serve!

















What a great way to use quinoa! It sounds delicious!
