Orange Quinoa Salad

We have been trying to eat more whole grains since they have a lot of fiber, protein, and vitamins. This is a recipe I came up with for quinoa that is full of flavor and makes a great side to fish or poultry.  You could also add some chick peas or grilled chicken to make it a great entree!

Ingredients:

1 cup dry quinoa

1/4 cup concentrated orange juice

1/4 cup cider vinegar

1-1/2 T. sour cream (I used fat free)

1-1/2 T. olive oil

1 T. agave nectar

1 tsp. salt

1/2 cup dried cranberries

1/4 cup chopped green onions

1/4 cup roasted pine nuts

Start by preparing the quinoa per instructions on the bag.

To make the dressing, combine the orange juice and next 5 ingredients (through salt).  I used an immersion blender to mix it well.

When the quinoa is done, mix it together with the dressing, cranberries, green onions, and pine nuts.
