Pineapple Fried Rice

My recent trip to Belize inspired me to use more tropical fruits in my cooking so when I found a beautiful giant pineapple on sale at Costco, I had to get it.  One of the things I made out of it was this pineapple fried rice with grilled chicken.  This recipe makes a lot so we got to eat the leftovers for a few days.  The teriyaki grilled chicken goes so nicely with the pineapple and gives it a great Caribbean flavor.  This dish is loaded with healthy veggies and whole grain so you can feel good about making it for your family!

Ingredients:

2 Chicken Breasts

2 T. Teriyaki Sauce

2 T. Soy Sauce

2 cups brown rice (you could also use white rice or instant rice)

4 cups water

1 tsp. canola oil

1 tsp. sesame oil

2 eggs, scrambled

2 cups diced pineapple (canned or frozen is fine if you can't get fresh, but fresh is definitely best!)

1 cup diced red pepper

1 cup diced carrots (mine were previously frozen)

1 cup peas (frozen as well)

1 cup diced onion

1 T. minced garlic

1 T. minced ginger

1 tsp. curry powder

1 tsp. agave nectar (or honey)

To get started, I put the chicken in a zip-lock bag with 1 T. soy sauce and 1 T. teriyaki sauce and let it marinate for at least an hour.

Then I grilled it (perfect to do while the little guy is playing in the yard).

I cooked the rice in the water (per instructions on the bag).

Then I diced the chicken and got the rest of the ingredients ready.

I heated the sesame and canola oil in my wok (med-high heat) and added the garlic and ginger  and sauteed it for about a minute.

Next I added the eggs and scrambled them until they were cooked.

I added the onion, and sauteed it for a couple minutes.

Then I added the pepper and let it saute for a few minutes, and then added the carrots, peas, chicken, and pineapple.

I combined the remaining tablespoon of Soy sauce and tablespoon of teriyaki sauce with the curry powder and agave nectar...

and added it to the wok.

After tossing it all together, I added the rice.

I garnished it with green onion but cilantro would also be great.

  2. We love fried rice, but our recipe is fairly boring (rice, egg, ham and a bag of mixed veggies) I love the idea of pineapple, peppers, and chicken (not to mention some spice!) I’ll definitely have to give this a try!

    Tonight was my second time enjoying this recipe, it is delicious! I would have never taken the chance of making one of my favorite take-out meals if it weren’t for me coming across your site…thank you. We have made it even more full of veggies by adding whatever we think would be delicious that’s in our veggie drawer, tonight was red and yellow pepper, green and sweet onions, pineapple, celery, carrots, peas…we also tried doing the chicken in the pineapple mango habenro sauce, it was amazing, thanks again for this recipe!
