Want your house to smell scrumptiously like fall? Well you could burn a pumpkin-scented candle (and end up with a burnt candle) or bake these muffins (and end up with some delicious, healthy muffins)!
Inspired by this recipe from food.com
Ingredients:
1-1/2 cups flour
1 T. baking powder
1/2 tsp. baking soda
1-1/2 tsp. pumpkin pie spice
1 cup rolled oats (regular or quick cooking)
3/4 cup packed brown sugar
1/2 cup dried cranberries
1 egg
1/3 cup vegetable oil
3/4 cup milk
1 cup canned pumpkin
Pre-heat the oven to 400 degrees.
Mix the first seven ingredients in a large bowl.
In a smaller bowl (I like to use my pyrex measuring cup) mix the egg, vegetable oil, milk, and pumpkin.
Pour the liquid ingredients into the dry ingredients and mix just until combined (you can do this with a mixer or by hand)
Spray your muffin tins with non-stick cooking spray and scoop the batter in, making 12-18 muffins. I like to sprinkle a little oatmeal on top to look pretty!
Bake 22-25 minutes, until a toothpick inserted in the center comes out clean.
