  6. The Pumpkin Crunch (Crumble) is amazing – I try to make it every year. My bestie taught me the recipe years ago; as a variation she flips it upside down so that the ‘crunch’ makes a crust (and of course tops it w/ homemade whipped cream). Thanks for the list Kate – I’ll have to get in the kitchen soon!

  10. Have you tried pumpkin muffins? A two-ingredient recipe? 1 can pumpkin, 1 (dry) spice cake mix? (I couldn’t resist adding a handful of chopped walnuts. Also, I didn’t have a spice-cake mix on hand, so used a yellow-cake mix and 1 tsp. of pumpkin pie spice.) Bake in cupcake liners in a muffin pan at 350° until nicely browned. (For easy release, spray the cupcake liners with cooking spray before filling with the mixture.) No added cholesterol (eggs), no added fat.
