I love Italian food becuase the ingredients are so simple and so flavorful!  I make this pesto to go on pizzas, pasta, salads, bruscetta, sandwiches... just about anything.  If you have a bumper crop of basil you can make a bunch and freeze it in ice cube trays to use in the winter.

You will need:

1 cup fresh basil leaves

3 T. extra virgin olive oil

1 tsp. salt

3 medium cloves of garlic

1 T. parmesean cheese

*optional* 1 T. pine nuts (or walnuts, almonds, etc.)

All you do is put all the ingredients in a food processor or blender and give it a whiz...

and you have delicious pesto!
